Renàz cheese
Renàz is a cheese from Livinallongo in the province of Belluno which is made from the milk of the Bruna Alpina breed of cow. It consists of two-fifths semi-skimmed and three-fifths whole milk.
The cheese, which is produced from December to May is semi-cooked and semi-hard. It is salted in brine for two days and is anointed with linseed oil for three months.
Matured for up to 1 year, Renàz has a height of 8 cm, a diameter of 30 cm and weigh around 5.5 kg. It has a hard, yellow rind, a cylindrical shape and a light straw-coloured interior with holes. It has a somewhat spicy flavour.
