Queso de Los Carriles cheese
Queso de Los Carriles is an artisan, whole cows’ milk cheese from the area of Los Carriles and the village of Injiestu in the ‘concejo’ of Llanes.
The milk is heated to 30-40 ºC and stirred for 30 minutes. The curds are cut, drained and placed into moulds, where they can drain further and are turned every two hours. After 48 hours, the cheese is immersed in brine and allowed to mature for one week.
The cheese has a soft, creamy interior, which is white in colour, and a pale yellow rind. It is rectangular in shape and weighs around 400 g. Those produced in Los Carriles are smaller than those from Injestu.
