Probably the best cut of pork. It's the meat that's in the middle of pork chops and contains almost no fat.
Cut into medallions it's ideal for kebabs and curries.
For stir-frys, cut it into thin strips as shown below and it will cook in a few minutes.

One large pork fillet is enough for four people when cooked sous-vide for a curry!
