Nostrano di malga cheese
Nostrano di Malga is a Bruno Alpina cows’ milk cheese from the province of Belluno. It is only produced between June and September.
The cheese, which is bathed in brine for 36 hours is matured for up to 5 months. It may be rubbed with oil, or wetted with wine. It has a hard, pink or yellow-brown rind and the interior is pale yellow to white and smooth. The flavour is sweet becoming spicier after 4 months maturation.
Cylindrical in shape, Nostrano di Malga is 7-12 cm high and 20-30 cm in diameter.
