Lys de Champagne is a cows' milk cheese produced by the Fromagerie de Mussy sur Seine in Chaorce in the Champagne-Ardenne region of France. It is matured for at least 2 weeks and due to its flat shape, the dough becomes very soft during refining. Its mild flavour attracts both the young and old alike and it weighs 350g.
