Lincolnshire Poacher cheese
Produced by Simon and Tim Jones on the edge of the Lincolnshire Wolds, Lincolnshire Poacher is an award-winning, artisan, unpasteurised, Holstein cows’ milk cheese.
The hard cheese has a cylindrical shape and a granite-like rind. It is matured for 14 -16 months and has plenty of flavour. It is also available as ‘Vintage’ (matured for 18 to 22 months) and ‘Smoked’ (over oak chips for 24 hours).
Another notable cheese, related to Lincolnshire poacher is Cambridge Gumburner cheese. The Cambridge Cheese Company bring Lincolnshire Poacher over the border into Cambridgeshire and mature it for a further two years into a very strong cheese indeed.
