Gruyère Fontu cheese

Gruyère Fontu cheese is an unpasteurised cows' milk cheese produced by Fromagerie de la Durance, in Guillestre which is in the Provence-Alpes-Côte d'Azur region of France.

The cheese is cooked, pressed and rind washed and is matured for 3 months. The summer cheeses are made from milk where the cows have been pasture fed, resulting in a smoother body which is richer in colour and very fragrant. The winter cheeses are made from milk where the cows are fed on hay which makes a softer cheese.

Each cheese weighs 25-28 kg.
