Fodòm cheese

Fodòm is an unpasteurised cows' milk cheese which has been produced since 1983. Fodòm is the Ladin name of Livinallongo del Col di Lana. Like Renaz and Contrin, it is produced exclusively by the Cooperative Dairy of Livinallongo, which has been in operation since 1932.

Fodòm is cylindrical in shape, with a height of 8-10cm, diameter of 30cm and weight of 5 Kg. The paste is moderately close-textured, straw-yellow in colour tending towards pale hazelnut towards the rind. It is pitted with a large number of regular holes of a diameter of 3-4 mm. It has a semi-soft and elastic consistency and a smooth, even, thin rind, hazelnut-brown in colour with the name marked upon it. It is a semi-fat table cheese and is best eaten within 60 to 90 days of production. It has a slightly acidic aroma reminiscent of yogurt, with a slight bitter, herby note.

The cheese is matured for 3 months.
