From Cantabria, this ‘Denominación de Origen Protegida’, pressed, ‘cream’ cheese is made with milk from Friesian cows.
Each cheese weighs between 400 g and 2.8 kg. The rind is soft and its colour is off-white. The cheese is also pale and had a firm and creamy texture. The flavour is soft, but slightly bitter. The cheeses are matured for at least seven days.
