Cacioricotta di bufala cheese
Cacioricotta di bufala is a buffalo milk cheese from Amaseno in Frosinone in the Italian province of Lazio which is produced all year round. It has a cylindrical shape and weighs from 100 to 300 g. It is matured for at least 60 days but also up to 1 year to produce a cheese suitable for grating. The flavour ranges from sweet when young to savoury when aged.
