  1. Put the potatoes in a saucepan, to which you have added 375ml of the cream
  2. Bring to the boil, then reduce the heat to low and simmer
  3. Gradually add the remaining 125ml of the cream.
  4. The cream should all be absorbed by the time the potatoes are cooked
  5. Season and serve, sprinkled with the chopped chives
