An unusual apple and cheese loaf that is perfect for Christmas and other festive occasions. This recipe uses Dragon mature Welsh cheddar cheese from South Caernarfon Creameries.

Mise en place

  • Preheat your oven to 180° C (350° F - gas 4), [fan oven 160° C & reduce cooking time by 10 mins per hour]

Method

  1. Grease and line a large loaf tin and set oven to 180/350/gas 4
  2. Beat butter and sugar together until light and creamy
  3. Sieve flour with cinnamon and place in bowl, add eggs and beat until smooth
  4. Add apple, walnuts, raisins and cheddar, mix in thoroughly
  5. Place mixture in loaf tin and smooth over surface, bake in oven for approx. 1 hour or until cooked through and golden brown on top
  6. Allow to cool for 15 minutes before turning onto wire rack

Serving suggestions

Serve slices lightly buttered for delicious treat

Variations

Use Dragon reduced fat mature Welsh cheddar cheese if you are watching your calories!
