Method

  1. Season the inside of each herring with a little salt
  2. Sprinkle on the onion
  3. Pack closely into a greased pie dish or casserole
  4. Sprinkle the top with salt and a few peppercorns
  5. Cover with a piece of greaseproof paper and bake in a moderate oven (180Β° C / 350Β°F / Gas 4) for about 10 minutes
  6. Then remove paper and allow fish to brown for a further 5 minutes
