Method

  1. Wash the greens and cut into 2.5 cm (1") lengths, discarding any stalks
  2. Cover with cold water and salt and leave for 10 minutes
  3. Heat a wok or large frying pan and add oil
  4. When hot, add the garlic and stir-fry for a minute or two. Don't allow the garlic to burn
  5. Add the greens and sprinkle with sugar
  6. Add the tablespoon of water and heat for 3 to 4 minutes until the leave change to a transparent green
  7. Arrange on a warm dish and serve
