Method

  1. Place the chillies in a saucepan and add enough water to cover.
  2. Bring to the boil, reduce the heat and simmer for about 5 minutes.
  3. Allow to cool in the liquid and drain.
  4. Blend the chillies in a food processor, adding a little of the water in which it cooked, if necessary.
  5. Store in an airtight container in the fridge.

Servings: 40 - Makes about 350-400ml

Variations

You can make this with any dried chillies, but if you use milder ones you may need to add more of the paste to your recipe.
