Method

  1. Heat the oil in a medium pan, add the onions and sauté over a medium heat for 7 minutes or until softened.
  2. Add the garlic and sugar and heat for a further few minutes.
  3. Stir in the flour and cook for a minute or two until combined.
  4. Turn up the heat, add the wine and stir constantly for a few minutes with a whisk.
  5. Add the bay leaves and the stock and heat for a further 5 minutes or until it reached your desired consistency.
  6. Remove the bay leaves and serve in a gravy boat.
