Method

  1. Descale the fillets if they have skin.
  2. Mix the spices and oil together to form a smooth paste
  3. Spread over both sides of the fish
  4. Leave to marinade for 1 hour in a cool place
  5. Cook for 4 minutes a side on a hot barbecue
  6. Remove, cover and rest for 7 minutes
