Method

  1. In a large pan, fry the bacon until crisp
  2. Remove from the pan and reserve
  3. Brown the rabbit on both sides
  4. Pour the hot stock over the rabbit
  5. Cover, and cook over a medium heat until the rabbit is tender - about 45 minutes
  6. Remove the rabbit and wrap in foil to keep warm
  7. Stir the flour and a little salt into the cream
  8. Gradually stir the cream into the pan liquid
  9. Cook, stirring constantly, until thickened
  10. Stir in the redcurrant jelly until melted
  11. Add the bacon and pour over the rabbit pieces which have been arranged in a serving dish
