Method

  1. Pour a little olive into a saucepan, which should be on a high heat.
  2. Add the rice and coat the grains with the oil.
  3. Reduce the heat immediately to low, and add the water or stock.
  4. Cover and simmer for 15 minutes, or until the rice has absorbed the liquid.
  5. Meanwhile, boil or steam the mixed vegetables until cooked.
  6. SautΓ© the shallots, garlic and ginger until soft.
  7. When the rice has cooked, add all of the ingredients (including the coconut milk).
  8. Heat through and serve.

As a snack or as an accompaniment to meat, fish and poultry dishes.

Variations

Use any vegetables you like, but they should be chopped small.
