Better than lime juice, I find

Taste Sensation Lime Powder is made from spray dried concentrated lime juice, which is rich in vitamin A, vitamin C, potassium, iron, phosphorus and calcium. It has an intense freshly squeezed lime taste, a real store cupboard gem, the perfect product for when a strong lime tart flavour is required. Ideal for any sweet or savoury recipe, home baking, (cakes, biscuits, muffins, cupcakes, pancakes), Mexican themed meals, flavouring icing, ice cream, or fruit smoothies, blends easily into yoghurt, crème fraiche or mayonnaise for a real zesty accompaniment to prawn, crab or salmon sandwiches. Can also be used for salad dressings, sauces, puddings, deserts, meringues, lemon tea, popcorn and seasoning blends and will have a much stronger flavour profile than using lemon juice. When used to flavour fish the lime powder will coat and soak into the fish, unlike using juice which will tend to run off.

Directions

I use a ratio of 5:1 which makes a nice lime juice to my taste.

  • 20g lime juice powder
  • 100 ml water

Add to a container and mix well with a hand blender.
