The fat rises to the top and the gravy juices can be poured off from underneath

A gravy strainer, gravy skimmer, fat separator, fat strainer is a device used to separate fats and juices from gravys, stocks and sauces.

The hot stock is poured into the separator and left for a minute or two in which time the fat rises to the surface and the stock can be poured out from underneath.
