Mise en place

  • Preheat the slow cooker per the manufacturer's instructions.

Method

  1. Remove the parson's nose from the chicken.
  2. Wash the chicken inside and out and dry thoroughly with kitchen towel.
  3. Heat the oil in a frying pan and add the chicken, breast side down.
  4. Fry for 10 minutes, turning the chicken so that it is browned all over.
  5. Place the chicken, breast side down in the slow cooker.
  6. Fry the onion and garlic in the remaining oil until they are golden brown - if there is a lot of fat in the pan after browning the chicken, drain some it off.
  7. Add the cider, mustard, sugar and seasoning and bring to the boil.
  8. Pour over the chicken.
  9. Add the hot stock, carrots, celery and oregano, ensuring that the chicken and vegetables are covered.
  10. Cook, covered, on high for 4 hours, turning the chicken after 3.
  11. Add the kale at this stage.
  12. When cooked, remove the chicken from the pot and allow to rest, wrapped in foil for 20 minutes.
  13. Carve the chicken and remove the vegetables from the slow cooker with a slotted spoon.
  14. Put 600ml of the cooking stock in a jug and mix with the sour cream, to make a gravy.
  15. Serve the chicken pieces/slices with the vegetables and gravy.

Serving suggestions

Serve with champ or plain mashed potatoes.

Variations

Would also work well with pheasant, although you may need to reduce the cooking time.

Chef's notes

Do use the strongest cider you can find. In general, the lower the strength of the cider, sweeter it is. My chicken was larger than 1.5kg so I had to add quite a bit extra cider.

You must make sure that there is sufficient liquid to cover the chicken and the vegetables.

Do not throw away the left over liquid. Keep it and use to make stock.
