Preparing pumpkin seeds

As Autumn is nearly here, I thought it might be useful to know how to prepare and dry pumpkin seeds as some of mine look as though they are ready. The leaves have all died off, I've picked them and they are just providing colour around the garden now.

Ready to be de-seeded

Cut the pumpkin open and remove the seeds.

Wash them really well under running water in a colander to remove the slightly sticky surrounding tissue.

Pat dry on a tea-towel or two.

Arrange on a baking tray and roast in the oven at 149° C (300° F - Gas 2 - Slow/Low) for 3 to 4 hours, stirring often and checking they are done.

Try making pepitas with them!
