Talk:Slow cooked silverside of beef
Apparently this tasted excellent BUT the joint fell to pieces (hence no photograph). When I bought it (ASDA) it was bound with what I thought was a type of string, but in fact it a plastic coated thread. (That will teach me to go slumming it). I therefore removed the offending item as I did not want seared plastic in the meat. This is probably why it fell apart and as silverside is not suitable for roasting I feel that it should have been bound with proper string. I have never cooked silverside before and have only used my slow cooker once before. I have another silverside in the freezer and will make the same again, but rebind it with string. I've not cooked this before, but most slow-cooked joints completely disintegrate after such a long cook - see the top picture for Pulled pork. I would expect any string used by a supermarket (on a joint - even if not for roasting) to be up to the job, plastic-coated or not. (unless they caveat otherwise).
I had fun with string on a recipe last night Pork fillet with sweet potato and rose harissa mash - fiddle-arsed job!
