Mise en place

  • Preheat the oven to 204Β° C (400Β° F - Gas 6)

Method

  1. Slice a piece out of the centre of the chicken breast to make a pocket using a sharp knife.
  2. Place the garlic, salt and pepper, chives and butter into a bowl and mix well.
  3. Stuff this mixture into the pocket in the chicken breasts.
  4. Dredge the chicken breasts in the flour, then dip into the beaten egg, then the breadcrumbs to coat completely.
  5. Heat the oil in frying pan and fry the chicken breasts on all sides for a few minutes until lightly browned.
  6. Transfer to a baking tray and bake for 20 minutes or until golden-brown and completely cooked.
