• 1 sprig of lemon thyme
• 1 top of a celery stick, complete with leaves
• 1 sprig of parsley
• Green part of a leek

Version 2

• 1 sprig of lemon thyme
• 1 sprig of lovage
• 1 sprig of parsley
• 1 spring onion, bruised

Version 3

• 1 sprig of marjoram
• 1 sprig of rosemary
• 1 sprig of summer savory

Version 4

• 1 bay leaf
• 1 sprig of French tarragon
• 1/2 stick of lemon grass, bruised
• 1 sprig of parsley

Method

1. Tie the ingredients with kitchen string or wrap in a piece of muslin.
2. Remove and discard before serving.
