Air fried chips are without doubt, the tastiest and probably the healthiest for of fried potatoes.

We use our air frier about three times a week, mostly for chips. Recently we've been twice-frying them. They are slightly better than single air-fried chips but because they can be ready after the final 15 minutes of air-frying, their cooking can be perfectly timed to match the accompanying meal.

I just thought it might be useful to outline this trick as I've not seen it suggested anywhere else.

Put simply, prepare and cook your air-fried chips as normal, switch the air fryer off after the chips have been cooking for about 18 minutes and leave them to cool in the air fryer for up to an hour or so. 15 minutes before you are ready to serve you meal, switch the frier on again for the final 15 minutes.

Mise en place

  • Peel the potatoes and cut to your desired size. A potato chipper is an economical and convenient way to do this, especially if you plan on making lots of chips, regularly.
  • Rinse off excess starch by soaking in cold water for 5 minutes
  • Refresh the water and add a teaspoon of sea salt - leave to soak until you are ready to start cooking.

Method

  1. Once you are ready to start cooking, pat the chips dry on a tea-towel and dry in a salad spinner.
  2. Add the chips to your air fryer together with 3 teaspoons of olive oil
  3. Air fry the chips for 18 minutes, then switch the air fryer off, leaving th e chips in the fryer.
  4. 15 minutes before you are ready top serve the main course, switch the air-fryer back on for the final 15 minutes.
  5. Serve, sprinkled with sea salt.
