Shaoxing huadiao cooking wine

Shaoxing cooking wine, Shaohsing cooking wine, Sichuan cooking wine, to my taste, is a much smoother version of Chinkiang rice vinegar. It is not a wine that you would drink but it is perfect for cooking.
I've used it in salad dressings for beanshoots and found that it at about 15% mixture it is a perfect addition to malt vinegar for making pickling vinegar.

Most Chinese_ingredient suppliers should stock this, or something similar. It is about three times the price of rice vinegar, but it remember, it is a wine. Oriental Delight (Norwich) stocks the Taiwanese product; pictured, and on-line suppliers such as Amazon should stock this also.
