Ingredients

- 2 large handfuls finely chopped fresh mint leaves, stalks removed.
- 2 tablespoons cider vinegar
- 2 tablespoons apple juice
- 1 tablespoon caster sugar
Method
- Wash and chop the mint leaves
- Place all of the ingredients in a bowl
- Mix well and leave to infuse for 30 minutes

- 2 tablespoons boiling water
- 2 tablespoons white wine vinegar
- 1 level tablespoon caster sugar
- Pinch of salt
Method (alternative recipe)
- Wash and chop the mint leaves.
- Place in a bowl with the sugar and pour on the boiling water.
- Leave to infuse for 5 - 10 minutes.
- Add salt and vinegar to taste.
Variations
Experiment with sherry vinegar, malt vinegar, cider vinegar and different mint types for some interesting variations.
