Method

  1. Wash and chop the mint leaves
  2. Place all of the ingredients in a bowl
  3. Mix well and leave to infuse for 30 minutes


Ingredients (alternative recipe)

  • 2 large handfuls finely chopped fresh mint leaves, stalks removed.
  • 2 tablespoons boiling water
  • 2 tablespoons white wine vinegar
  • 1 level tablespoon caster sugar
  • Pinch of salt

Method (alternative recipe)

  1. Wash and chop the mint leaves.
  2. Place in a bowl with the sugar and pour on the boiling water.
  3. Leave to infuse for 5 - 10 minutes.
  4. Add salt and vinegar to taste.

Variations

Experiment with sherry vinegar, malt vinegar, cider vinegar and different mint types for some interesting variations.
