Basically same recipe, but experimenting using up leftover bits and bobs and as I had lots, much more chilli flakes, not really measured properly, but hopefully these notes will allow me to easily replicate.
- About 4 pints chilli flakes (by volume)
- 500 ml malt vinegar
- 350 ml red wine vinegar
- 100 ml white wine vinegar
- 150 ml lemon juice
- 200 ml cranberry juice
- 150 g jaggery
- 3 tablespoons muscovado sugar
- 3 tablespoons salt
- 3 tablespoons garlic powder
- Juice of 4 oranges - simmer skins, then remove
- water (300 ml ??) to allow chili to re-hydrate
- 200 ml walnut oil
Simmer for a couple of hours or so until well mixed and reduced to desired level. Stir in walnut oil and cool.
Quantity at finish, > 3 litres & it tastes brilliant!
