Caramel colouring.

Caramel colouring is a water soluble food colouring; it is made by the carefully burning sugars. It is more fully oxidized than caramel candy and has an odour of burnt sugar and a somewhat bitter taste. Its colour ranges from pale yellow to amber to dark brown.

It's commonly used as gravy browning but can also be used to colour meats, pickles, homemade beer and even cake icing.

As it usually only contains an E150 variant (caramel), salt, water and glucose syrup it is normally suitable for vegetarians.
