Monoglyceride and diglyceride flakes (E471), also known as glycerine flakes are derived from fats, obtained from glycerine and fatty acids (typically vegetable oils) attached to glycerol. However, they do not contain glycerine. They are mainly used to emulsify fat molecules with water and work with all types of products containing water. It has a high stability rate and must be be broken down with a fatty element, then added to the watery element. It is sold in the UK under the name Glice and is part of the El Bullí 'Texturas' range of additives.
