Basic brown loaf

This recipe is suitable for a standard breadmaker, specifically the Panasonic SD253 and similar models.

Use menu 01 Basic bake (4 hours 5 minutes) on Panasonic SD-ZB2502 automatic breadmaker

It will almost certainly work for most breadmakers and is worth trying if you have lost your instruction book!

The timer may be used for this recipe.

I've found that with all brown or wholemeal flour bread recipes, half a vitamin C tablet (ascorbic acid) crushed between two tablespoons (about 100 mg) and added to the flour, seems to prevent a heavy, poorly risen loaf. It has an effect on Glutathione (WIkipedia) which has an affect on the the elasticity of the dough.

Quite heavy going


I prefer a 50/50 mix of brown and white flour as I find all brown flour makes the bread quite dense and heavy going.

  1. Place the ingredients in your breadmaker in the order shown
  2. Select Bake program (4 hours) Panasonic SD253 and similar models.
  3. Select menu 01 Basic bake (4 hours 5 minutes) on Panasonic SD253 breadmaker
  4. Select menu 04 Whole wheat (5 hours) on Panasonic SD-ZB2502 automatic breadmaker
  5. Select chosen crust option
  6. Select the appropriate loaf size to match the recipe [Medium, Large or Extra large]
  7. Start
