* 100g (4 oz) Butter
* 2 tablespoons fresh Mint leaves, washed and finely chopped
* Pinch of each; Salt, Pepper and Sugar

* Work the Mint and seasoning into the Butter
* Shape by rolling in Foil
* Cut into usable portions
* Wrap well, use immediately or refrigerate or Freeze for later use.
