Piquín chillies

Pequín (Piquín or Penguín) chilli is a hot chilli pepper, also known as "bird pepper", that is commonly used as a spice. It is similar in strength and flavour to the Thai Bird's eye chili peppers.

Pequin has a compact habit growing typically 0.3 - 0.6 meters tall, with bright green, ovate leaves and small fruits that rarely exceed 2 cm in length. Like most chiles, fruits start out green, ripening to brilliant red at maturity.

The Cholula brand hot sauce lists piquín peppers and árbol chillies among its ingredients.

  • Heatscale: 8/10
  • Flavour: nutty and corny flavours searing hot citric heat
  • Uses: crush and use in soups, salsas and sauces, convenient to flavour vinegars and oils
