Amadeus cheese
Amadeus is a pasteurised cows’ milk cheese from Voitsberg in Styria (Steiermark) and is named after Wolfgang Amadeus Mozart.
The cheese has a pale yellow, smooth, creamy, rich texture with occasional, round holes and a mild, aromatic flavour. It has a black waxed rind.
The cylindrical cheese has a diameter of 25 cm, a height of 9 cm and weighs about 4.4 kg. It is matured for a minimum of eight weeks.
