Method

  1. Heat the oil in a wok or frying pan until it is hot, but not smoking.
  2. Add the garlic and chillies and fry briefly until the garlic is golden. Do not allow to burn.
  3. Stir in the noodles and add the remaining ingredients.
  4. Cook until the pepper is cooked, but still firm.

Chef's notes

Sen yai are flat, wide rice noodles, which you should be able to obtain from an oriental grocer.

Variations

I have used egg noodles by preference and the dish as photographed also had a little ham and Home smoked bacon added as too.
